1. Add tablespoons of water
If you have added a few tablespoons of extra flour and the mixture is dry you can start by adding 1-2 tablespoons of milk. Mix in the milk in gently until the batter is at the correct consistency.
If this isn’t enough to correct the mixture it is time to add more of the other wet ingredients.
2. Add extra sour cream
If the banana bread recipe you have includes sour cream then it is time to add extra. IF you have added an extra 1/3 of the volume of flour, add 1/3 more sour cream.
3. Add extra egg
If your recipe includes egg then you will need to add more to counteract the extra flour. If you have added 30-50% more flour than needed, add an extra egg to the mix.
Most banana bread recipes include 2 eggs. The extra egg will help to add back moisture and help the ingredients to bind together.
4. Add extra baking soda
If you have added extra plain flour, then it is important to add additional raising agent. Add extra baking soda to the recipe to help the banana bread to rise and avoid it becoming dense.
You will only need an extra ¼ to ½ a teaspoon to correct for the extra flour.
5. Add extra fat
Adding extra fat will be important if you have added extra flour. Most recipes use melted butter or vegetable oil. Work out how much extra flour you have added and add the same proportion of extra fat.
If you are not sure, start by adding 2 tablespoons of melted butter or oil. Mix it in and see if the batter is at the right consistency. Add extra if needed.
6. Add extra sugar
To add back sweetness to the loaf you will need to add extra sugar. Add this in proportion to the amount of flour and other ingredients needed. Most recipes will include ¾-1 cup of sugar in the whole mix.
If you have added 30% more flour, then add 1/4 – 2/3 of a cup of extra sugar.
7. Add extra flavoring
If you have added extra flour, it is important to add some extra flavor so that your banana bread does not end up tasting bland. Add small amounts of extra cinnamon, vanilla and nutmeg to make sure your banana bread still tastes rich and delicious.
8. Cook for an extra 5-10 minutes
Adding extra flour and other ingredients to banana bread batter will increase the volume. This will mean that it will take longer to cook through. The more flour you added, the longer this will be.
Start by increasing the cooking time by 5 minutes and check the loaf. If it still needs more add it back into the oven until it has cooked through in the middle.
